I know many people despise Brussels sprouts, but they happen to be one of my favorite vegetables. I’m convinced the reason why so many people have a problem with this crucifer is because they have bad memories from childhood in which the sulfurous vegetable was simply boiled in water with no exciting flavors added. When prepared well, this vegetable really shines. I almost always roast Brussels sprouts with a generous coating of fat, usually butter, at high heat to achieve some caramelization on the outer layers of the baby cabbages. I love how they get so crispy! The combination of spicy and sweet flavors goes wonderfully with these roasted sprouts. The health benefits of cruciferous vegetables are pretty awesome!
