This recipe is bursting with flavor and it’s super easy to make. It’s a slow cooker meal after all. Every now and again I get a craving for Chinese food, there’s something about those savory, umami flavors that just screams comfort food to me. I love creating homemade versions of take-out favorites to satisfy that craving. When I thought of this recipe, I was trying to re-create Orange Chicken. The citrus flavors in this recipe shine through and the chicken becomes incredibly juicy and tender after hours marinating in the slow cooker. I used chopped dried apricots for this recipe, as they rehydrated during the cooking process, they added another layer of sweet fruity flavor to the sauce. You can serve the chicken over rice or cauliflower rice with some stir-fry veggies on the side. Top with green onion!
