Ingredients

    Ingredients for Burgers:
  • 1 14.75 oz can wild salmon (include skin and bones for extra calcium & vitamin D!)
  • 1/4 cup almond meal/flour
  • 1 large egg
  • 3 cloves garlic, crushed
  • 1/2 medium onion, diced
  • 1 Tbsp whole grain mustard (or mustard of choice)
  • 1/2 tsp ground black pepper
  • 3 Tbsp olive oil (divided)
  • Ingredients for Sauce:
  • 1/4 cup tahini (ground sesame seed paste)
  • 1/4 cup plain greek yogurt (for dairy free, substitute plain soy, almond, or coconut yogurt)
  • 2 Tbsp plain unsweetened almond milk (or milk of choice)
  • 2 Tbsp lemon juice
  • 1 & 1/2 tsp dried dill (if you have fresh on hand, go ahead and use that in place)
  • pinch ground black pepper
  • pinch salt

Method

  1. In a small pan add 1 Tbsp olive oil and heat to med-high. Once heated, add onion and cook for about 4 minutes or until translucent, then add garlic and cook an additional 2 minutes.
  2. While onions and garlic are cooking add salmon (drain excess water/liquid from can), almond meal, egg, mustard and pepper to a medium sized bowl and mix thoroughly. You may need to us a fork to flake apart the salmon and mix everything together. Once onion and garlic are cooked, add into the salmon mixture.
  3. In a medium-large skillet add remaining 2 Tbsp olive oil and heat to medium.
  4. With your hands, form salmon mixture into 3 patties. Once oil is hot add the patties to the skillet.
  5. Cook for about 3-5 minutes per side or long enough to get a golden-brown crisp on each side. Be gentle when flipping, as burgers are fragile.
  6. While burgers are cooking add all of sauce ingredients into a small bowl and whisk together.
  7. Serve burgers bun-less, on top of salad greens or with a toasted bun. I served these bun-less and let guests add their own sauce at the table.
