One of my favorite vegetables is okra! This vegetable is a southern favorite in the fried form; however, it’s just as tasty prepared a variety of other ways. Growing up, I loved okra and tomatoes over rice. Today, I still love the simplicity of that dish. For this recipe, I wanted jazz up one of my old favorites with some new flavors. I used fire-roasted tomatoes for an extra burst of flavor as well as bacon! YUM. Served over a generous portion of cauliflower rice, you’ll certainly get your vegetables in for whichever meal this side dish accompanies.
