Homemade salad dressings are the bomb! A long time ago I stopped buying bottled salad dressings from the store because they are loaded with preservatives and artificial flavors. The fat-free stuff not only tastes like plastic, but to compensate for the lack of flavor, manufacturers add excess salt and sugar. Fat-free and “lite” dressings serve little purpose if you’re trying to consume a nutrient dense diet. We NEED dietary fat in our salad dressing to help maximize absorption of the fat-soluble nutrients available to us in the salad itself! Specifically, vitamins A, D, E and K. The easiest thing to do when making a salad at home is to drizzle some olive oil and vinegar on your salad, however, when you want something a bit more special you may decide to make your own dressing. This vinaigrette is a delicious alternative to store bought dressing. Once you begin dressing your salads with simple ingredients like high quality oil and vinegar, you will notice how easily you can taste the “fake” stuff in typical store bought varieties.
