Ingredients

  • 1 large head of cauliflower, grated in food processor (instructions below)
  • 5 large carrots, peeled and grated
  • 1/2 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp coconut oil
  • 2 tbsp curry powder
  • 1 tsp fresh ginger, grated
  • 1/2 cup raisins (I used a mix of golden raisins and dark raisins)
  • 1 tbsp honey
  • 3 tbsp apple cider vinegar
  • 1 can garbanzo beans, or any bean of choice, drained and rinsed
  • 1 tsp red pepper flakes (optional, if you like spicy)

Method

  1. Chop the cauliflower into medium sized florets. Using the shred attachment of a food processor add cauliflower florets and pulse until the pieces are small and resemble couscous. You may need to do this in a few batches depending on the size of the food processor.
  2. Peel carrots and shred using a grater or food processor.
  3. Once all veggies are prepped, add coconut oil and curry powder to a large pot and heat to medium-high.
  4. When oil is is hot and the you begin to smell the curry powder "toasting," about 2-3 minutes, add diced onion. Reduce heat to medium and allow onions to cook for 3 minutes, next add minced garlic and grated ginger and cook for another 2 minutes, stirring occasionally.
  5. Add cauliflower and carrots. Stir vegetables to incorporate the curry seasonings. You will know when it is thoroughly mixed because all the veggies will turn yellow.
  6. Add the vinegar, raisins, red pepper flakes and garbanzo beans and stir to incorporate.
  7. Place a lid on the pot and reduce heat to medium-low and allow the "couscous" to steam for 10-15 minutes. The length of time will vary depending how soft you want your "couscous."

Notes

This can be served as a side dish or you could top with a protein of choice and make it into a meal!
